Just bought a pit barrel cooker. just breaking into the BBQ thing. every video stresses the RUBS and the PRODUCTS... made several different ones, bought a few, can't stomach them. thought I wasted my money. Just yesterday I did a simple salt Pepper Garlic chicken.... perfect. I'm so glad I didnt use them on a brisket. That's the next cook!

My son is vice-president for a national bank chain, he mentors youth, and is pastor of his church. He does grill, but doesn't have time to smoke meat. His birthday is here in July, and what I do as a gift, is BBQ beef ribs for him (he doesn't eat pork for religious reasons). I lived in Columbus OH from '89 - 2010 and there was an actual butcher shop where I would buy beef ribs, and even after I moved an hour away, I would still (like you chef) drive to buy meats..but sadly, two years ago the shop closed..I can only find small beef ribs here, not much meat on them. And when I moved back here, I didn't have a yard anymore. I would first cook the beef ribs in my Instant Pot, and finish in the stove under the broiler..My son was still very happy with the ribs. Now that I've bought a Pit Barrel Smoker, I'm going to do a whole brisket for him next weekend..I pray the weather holds out, our patio isn't covered...I have the same Masterbuilt Electric smoker as you..The patio outlet is on the same circuit has the kitchen microwave and coffee maker..I didn't know this ,until I first had two chickens in the smoker, and my wife used the microwave, that kicked out the breaker..which also shut off the Masterbuilt. I had wireless meat probes in the chickens, and in the smoker, when I noticed the temperature was dropping. It took me a minute to realize what happened. My electrician friend is coming one weekend to split the wiring so that the patio outlet has its own breaker..My youngest daughter catering business is really doing well, I'm going to start helping her by smoking chickens in the Masterbuilt. I can smoke/roast 10 chickens at a time. I have a vacuum sealer, I will cut them up and seal for her, so that all she has to do is reheat..

You can't beat the old school way. The traditional way has been transformed with time and social media. Its evolved as other ways of doing things have become "popular" BUT nothing beats the original way. That's hard to grasp but it's reality.

This is what I'm looking for; the real way to do it. Every other video I watch is like "Cook at room temperature for 30 days, wrap in foil, and serve at your funeral because you died waiting for it to finish.". Love this!!
LOL off set smoking takes a bit more time.
@@bbqsouthernstyle I did an off set turkey smoke for Thanksgiving and that was an 8 hour babysitting gig; turned out great though. Normal grill, drippings pan directly under the turkey, either side charcoal and hickory chunks. OH and the grill has two removable plates so I just took one out and scootched the other center of the grill above the drippings pan.

Made up the shrimp salad today, a few changes. Used 2 lbs of 21-25 shrimp. After cold water bath they received juice of one lime, some salt and pepper then into the refrigerator. Vegies used celery, corn (not shucked 4 minutes in microwave before cutting from cob), green onion tops, two slices of Vidalia onion, cilantro, garlic all cut small as per instructions. One avacado small chunked up. Mayonaise, probably used too much, back in the refrigerator until chilled. Yes, it is good, maybe could have a bit of hot salsa. Dang I miss my Southern heritage.
